You’ve seen it in small, high-end coffee shops cafes all over the world. Pour over coffee is part of a trend in the industry focusing on higher quality and much more interactive coffee-making process known as 3rd wave coffee. ITs actually not actually a new thing, this particular extraction method has been used for quite a long time. Japan and now Taiwan and South Korea are particularly, particular to this method; a trend and skill which seems to extend from a long-standing tea-making tradition and understanding of the more complicated details and moving parts involved in fine tea brewing.  In the USA pour-over coffee options seem to be connected to the explosion of trend-setting, local micro-roasters and the surging popularity of single-origin, fair-trade, small batch roasted exotic coffee.
